Ingredients
for 4 servings:
1.2 kg of veal boiled fillet
2 kohlrabi stalks
3 turnips
3 beets
200 grams of mini peppers
2 tablespoons oil
5 shallots
1 garlic clove
1 tablespoon oil
salt & pepper
Preparation :
Preheat the oven to 200 degrees, fan oven 180 degrees, gas mark 4.
Peel the kohlrabi, turnips and beetroot and cut into wedges. Halve the peppers, clean and rinse. Brush the prepared vegetables with oil and season with salt.
Spread the vegetables on a baking tray lined with baking paper. Bake in the preheated oven for about 35-40 minutes.
TIP: (But only put the vegetables in the oven when the meat is already being fried in the pan, otherwise the vegetables and meat will not be ready at the same time later).
Meanwhile, peel the shallots and garlic and halve or slice them.
Rinse the boiled beef and pat dry, cut off any remaining tendons and rub the meat with salt and pepper. Heat oil in a large pan. Fry the boiled beef all over.
Add shallots and garlic and fry for a few minutes. Put the meat and onion mixture in the oven's dripping pan. Remove the drippings from the pan with a little water and a brush and drizzle over the meat. Put the meat in the oven as a second tray about 35 minutes before the end of the vegetable cooking time.
Take the boiled beef out of the oven and let it rest for at least 5 minutes before slicing. Rinse the reserved turnip greens, dry them, chop them and mix them with the oven-baked vegetables. Season with salt and pepper if necessary.
